The grapes undergo a selective mechanical harvest wherein a sorting belt further separates the berries according to size. Afterwards, they are pressed directly and left to rest for hours. Only the “free run” juice is used, i.e. the juice that runs off the press without great pressure, in order to ensure the elegant and fine character of this Blanc de Noirs.
