Early in the morning, the grapes are selectively harvested and directly pressed. On the way to the winery, we add dry ice to cool the grapes and protect them from oxidizing. After gentle pressing, slow fermentation takes place to bring the flavors to life.
A revelation of aromas — citrus, passion fruit, herbs — rounded off with a delicate minerality. Very animating, elegant, and taut with a nice drinking flow.
